Ingredients (makes about 10 small servings):
For the base:
1 cup gluten-free rolled oats or millet flakes
½ cup shredded coconut
¼ cup chia seeds
¼ cup raw cacao powder
¼ teaspoon salt
For the filling:
1 ripe banana, sliced
⅓ cup unsweetened applesauce
2 tablespoons maple syrup or agave nectar
1 teaspoon vanilla extract
Optional additional toppings (for garnish):
¼ cup fresh berries (blueberries, raspberries, blackberries)
½ avocado, sliced
¼ cup chopped nuts (walnuts, pecans, almonds, etc.)
¼ cup crushed freeze-dried fruit (such as mulberries, strawberries, or cherries)
Instructions:
Step 1: Prepare the base
Preheat your dehydrator to 115°F (46°C) or use the lowest setting on your oven (around 170°F/75°C). Line two miniature muffin trays with parchment paper liners.
In a large mixing bowl, combine the oats, shredded coconut, chia seeds, cacao powder, and salt. Stir well to incorporate all ingredients.
Divide the mixture evenly among the prepared muffin cups, pressing down firmly with wet hands to compact the mixture and create an even layer. Set aside.
Step 2: Make the filling
Place the sliced bananas in a small mixing bowl. Add the apple sauce, maple syrup, and vanilla extract, stirring well to combine.
Spoon approximately 1 tablespoon of the filling mixture onto each base-lined muffin cup. Use a spoon or piping bag to spread the filling evenly.
Step 3: Dehydrate the bites
Place the filled muffin cups in the preheated dehydrator or low-temperature oven. Depending on your chosen method, dehydrate for 2-4 hours or until the edges are slightly dry but the centers still feel soft when pressed lightly.
Check frequently after the first hour, as oven temperatures may vary. Once the desired consistency has been reached, remove from heat and allow to cool completely before handling.

Store any leftover desserts in an airtight container at room temperature for up to a week or in the refrigerator for up to 2 weeks. These little powerhouses can also be frozen for up to 3 months if preferred. Simply thaw overnight in the fridge and enjoy!
