Description: This delicious, creamy chocolate mousse takes you on a culinary journey around the world without ever leaving your kitchen. Made with exotic ingredients like dates, cacao powder, and medjool date caramel, this vegan dessert is not only healthier but also more adventurous than traditional chocolate mousses.

Ingredients:

For the chocolate mousse:
1 cup pitted medjool dates (about 10 dates)
1/2 cup unsweetened cocoa powder
1 tsp vanilla extract
1/4 tsp sea salt
1/2 cup unsweetened almond milk

For the toppings:

Optional – For a richer, fancier version, you can top each serving with:

• Chopped nuts (walnuts, pecans, hazelnuts, etc.)
• Berries (blueberries, raspberries, strawberries, etc.)

Instructions:

Step 1: Prepare the chocolate mousse:

1. Add all the ingredients for the chocolate mousse into a food processor or high-speed blender. Process until completely smooth and thick, scraping down the sides as necessary.

2. Pour the mixture into small individual serving bowls or glasses. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.

Note: If using a sugar substitute like stevia or monk fruit sweetener, start with less than the recommended amount and adjust to taste.

Step 2: Make the date caramel sauce:

While the chocolate mousse is setting, prepare the date caramel sauce. It’s super easy and only requires two ingredients!

1. Combine 1 cup pitted medjool dates and 1/4 cup water in a small saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes, stirring occasionally.

2. Remove from heat and let cool slightly. Using an immersion blender or regular blender, puree the mixture until smooth.

3. Stir in 1 tsp vanilla extract and optional pinch of sea salt if desired. Taste and adjust seasoning as needed.

Step 3: Serve the decadent vegan chocolate mousse:

To serve, spoon some of the date caramel sauce onto the bottom of each serving dish. Then, carefully scoop out some of the chilled chocolate mousse on top of the caramel. Garnish with chopped nuts and berries (if using).
