* 1/2 cup dark chocolate chips (optional)

Instructions:

Day 1: Prepare the Base

1. Preheat your oven to 350°F (180°C). Line a large baking sheet with parchment paper.
2. In a mixing bowl, combine the rolled oats, coconut flakes, baking soda, and pinch of salt. Mix well.
3. Transfer the mixture onto the prepared baking sheet and spread evenly. Bake for 10 minutes, stirring halfway through. Remove from heat and let cool completely.

Day 2: Assemble Your Parfaits

1. Place the base layer in a glass or mason jar.
2. Add the mashed banana, followed by the unsweetened applesauce. Use a spoon or whisk to mix everything together.
3. Add the maple syrup, vanilla extract, and optional dark chocolate chips. Stir until combined.
4. Pour the mixture over the base layer.

Optional: For added crunch, top each parfait with some granola or chopped nuts before serving.
