Instructions:
Crust:
1. In a large mixing bowl, combine the oats, chia seeds, coconut, maple syrup, and vanilla until well combined. Mix occasionally as the mixture starts to thicken.
2. Transfer the crust mixture to a parchment paper-lined 8×8-inch square baking dish. Press firmly into the bottom of the dish using wet hands or a spoon. Place the prepared pan in the freezer while you prepare the filling.
Filling:
3. To make the cashew cream cheese, soak the cashews in water for at least 2 hours or overnight. Drain and rinse the cashews before placing them in a high-powered blender with the lemon juice, apple cider vinegar, and optional salt. Blend until smooth.
4. Add the bananas, maple syrup, and vanilla to the cashew mixture and blend until fully incorporated. Taste and adjust seasonings if desired.
Assembly:
5. Remove the frozen crust from the freezer and pour the filling evenly over the top. Use a spatula to gently spread the filling outward, ensuring there are no air pockets. Cover and place the pan back in the freezer.
