Ingredients:

For the Crust:
1 cup gluten-free rolled oats (preferably steel-cut)
1/4 cup chia seeds
1/4 cup unsweetened shredded coconut flakes
1 tablespoon maple syrup (or preferred sweetener)
1 teaspoon vanilla extract

For the Filling:
1/2 cup cashew cream cheese (homemade or store-bought)
1 ripe banana, mashed
1 tablespoon maple syrup
1 teaspoon vanilla extract
Optional: pinch of salt

Instructions:

Crust:
1. In a large mixing bowl, combine the oats, chia seeds, coconut, maple syrup, and vanilla until well combined. Mix occasionally as the mixture starts to thicken.
2. Transfer the crust mixture to a parchment paper-lined 8×8-inch square baking dish. Press firmly into the bottom of the dish using wet hands or a spoon. Place the prepared pan in the freezer while you prepare the filling.

Filling:
3. To make the cashew cream cheese, soak the cashews in water for at least 2 hours or overnight. Drain and rinse the cashews before placing them in a high-powered blender with the lemon juice, apple cider vinegar, and optional salt. Blend until smooth.
4. Add the bananas, maple syrup, and vanilla to the cashew mixture and blend until fully incorporated. Taste and adjust seasonings if desired.

Assembly:
5. Remove the frozen crust from the freezer and pour the filling evenly over the top. Use a spatula to gently spread the filling outward, ensuring there are no air pockets. Cover and place the pan back in the freezer.

Chill and Serve:
6. Allow the tart to chill for at least 4 hours or overnight. When ready to serve, remove from the freezer and let sit at room temperature for about 10 minutes to soften slightly. Garnish with fresh fruit, nuts, or edible flowers (if desired).

Note: The tart will keep in the freezer for up to 2 months. Let thaw completely before serving. Enjoy!
