– 1 cup sugar (or your preferred sweetener)
– 1/2 cup fresh or frozen lychees, pureed

For the Martini:
– 1 1/2 oz vodka (we recommend using a high-quality grain-based vodka)
– 1/2 oz fresh lime juice
– 1 tsp honey (optional)
– 1 tbsp agave syrup (optional)
– Ice cubes
– Sliced fresh fruits like lemons, limes, and green apples for garnish

Instructions:

1. Prepare the Lychee Simple Syrup: In a small saucepan over medium heat, combine the water, sugar, and pureed lychees. Stir until the sugar has dissolved completely. Set aside to cool.

2. Make the Martini: Pour the chilled vodka, lime juice, honey (if using), and agave syrup (if using) into a shaker filled with ice. Shake well for about 10 seconds.

3. Strain the mixture into two chilled martini glasses. You may need a fine mesh sieve if you have smaller ice cubes.

4. Garnish with sliced fresh fruits like lemons, limes, and green apples. Serve immediately.

Note: If you don’t have access to fresh or frozen lychees, you can use 1/2 cup of light-colored, sweetened cherry juice mixed with 1/4 cup of water as a substitute. The ratio should still be 1:1 when making the simple syrup.
