Steps

1
Done

In a small bowl, whisk together the soy sauce, mirin, maple syrup, minced garlic, and grated ginger to make the teriyaki marinade.

2
Done

Place the tofu strips in a shallow dish and pour half of the teriyaki marinade over them. Let the tofu marinate for at least 15 minutes, flipping the tofu strips halfway through.

3
Done

In a small saucepan, bring the remaining teriyaki marinade to a simmer. Stir in the cornstarch-water mixture and cook until the sauce thickens. Remove it from heat and set aside.

4
Done

In a skillet over medium-high heat, add a bit of oil or use a non-stick skillet. Cook the marinated tofu strips for about 2-3 minutes on each side until they are lightly browned and have absorbed the marinade.

5
Done

To assemble the wrap, lay a tortilla flat on a clean surface.

6
Done

Place a few slices of cucumber, shredded carrots, fresh lettuce or spinach leaves, and cooked brown rice (if using) on the tortilla.

7
Done

Add the cooked teriyaki tofu strips on top of the vegetables.

8
Done

Drizzle the homemade teriyaki sauce over the tofu.

9
Done

Sprinkle sesame seeds on top for extra flavor and texture.

10
Done

Carefully fold in the sides of the tortilla and then roll it up tightly, similar to a burrito.

11
Done

Slice each wrap in half diagonally and serve.
