For Teriyaki Sauce:
1/4 cup soy sauce (or tamari for gluten-free)
2 tablespoons maple syrup
1 tablespoon rice vinegar
1 tablespoon mirin (sweet rice wine)
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
1 tablespoon cornstarch (or arrowroot powder) mixed with 2 tablespoons water
For Tofu and Noodles:
8 oz (225g) soba noodles (gluten-free if needed)
1 block (14 oz or 400g) firm tofu, pressed and cubed
2 tablespoons sesame oil
2 cups broccoli florets
1 red bell pepper, thinly sliced
2 green onions, sliced diagonally
1 Sesame seeds for garnish
1 Sliced nori sheets for garnish (optional)

Cook the soba noodles according to the package instructions, usually for about 4-5 minutes in boiling water. Drain and set aside.

In a small bowl, whisk together all the teriyaki sauce ingredients, including soy sauce, maple syrup, rice vinegar, mirin, minced garlic, and minced ginger.

In a large non-stick skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the cubed tofu and cook until it turns golden brown on all sides, about 5-7 minutes. Pour half of the teriyaki sauce over the tofu and stir well. Cook for an additional 2-3 minutes until the sauce thickens and coats the tofu. Remove the tofu from the skillet and set it aside.

In the same skillet, add another tablespoon of sesame oil. Stir in the broccoli florets and red bell pepper slices. Sauté for about 5 minutes until they become tender but still crisp.

Return the cooked soba noodles to the skillet, along with the remaining teriyaki sauce. Toss everything together and cook for an additional 2 minutes until the noodles are heated through and coated in the sauce.
