1 small red onion, finely chopped
3 cloves garlic, minced
1/2 cup fresh parsley, chopped

1 teaspoon paprika
1 Salt and pepper to taste
2 tablespoons olive oil
For the Tahini Sauce:
1/2 cup tahini
2 tablespoons lemon juice
2 cloves garlic, minced
1 Salt and pepper to taste
1 Water, as needed for thinning
For Serving:
1 Pita bread or flatbreads
1 Sliced cucumbers, tomatoes, and red onions
1 Fresh parsley and cilantro leaves
1 Lemon wedges
