1/4 cup finely chopped red onion
4 cloves garlic, minced

1 Salt and pepper to taste
1/2 cup gluten-free breadcrumbs (or regular if not gluten-free)
2 tablespoons chickpea flour (besan)
1 Juice of 1 lemon
1 Zest of 1 lemon
For the Tahini Sauce:
1/2 cup tahini paste
2 tablespoons lemon juice
2 tablespoons water
1 clove garlic, minced
1 Salt to taste
For Burger Assembly:
4 whole-grain or gluten-free burger buns
1 Sliced cucumber
1 Sliced tomato
1 Red onion rings
1 Fresh lettuce leaves
