Steps

1
Done

For the Black Bean Patties:

2
Done

In a food processor, combine the black beans, rolled oats, red bell pepper, red onion, minced garlic, ground cumin, chili powder, smoked paprika, salt, black pepper, and tomato paste.

3
Done

Pulse the mixture until it's well combined but still has some texture. You don't want it to be completely smooth.

4
Done

Transfer the mixture to a bowl and let it sit for 10 minutes to firm up.

5
Done

Divide the mixture into 4 equal portions and shape them into burger patties.

6
Done

Heat a skillet over medium-high heat and add a drizzle of cooking oil.

7
Done

Fry the black bean patties for about 4-5 minutes on each side or until they are golden brown and heated through. Remove from heat and set aside.

8
Done

For Avocado Salsa:

9
Done

In a bowl, gently combine diced avocados, diced tomatoes, finely chopped red onion, chopped fresh cilantro, lime juice, salt, and black pepper. Mix until all ingredients are well incorporated.

10
Done

For Burger Assembly:

11
Done

Toast gluten-free burger buns if desired or use lettuce leaves as a low-carb option.

12
Done

Spread a generous amount of vegan chipotle mayo on the bottom half of each bun or lettuce wrap.

13
Done

Place a black bean patty on top of the mayo.

14
Done

Add fresh lettuce leaves and a spoonful of avocado salsa on top of the patty.

15
Done

If you like it spicy, add sliced jalapeños.
