4 slices of crusty Italian bread (gluten-free if needed)

2 large tomatoes, diced

1/4 cup fresh basil leaves, chopped

2 cloves garlic, minced

2 tbsp extra-virgin olive oil

1 tsp balsamic vinegar

1 Salt and black pepper to taste

Directions
While the bread is toasting, prepare the topping. In a mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, extra-virgin olive oil, balsamic vinegar, salt, and black pepper. Mix well to combine.
Remove the toasted bread from the oven and let it cool slightly.
Once the bread slices are cool enough to handle, rub one side of each slice with a garlic clove to infuse them with garlic flavor.
Spoon the tomato and basil mixture evenly onto the garlic-rubbed side of each bread slice.
Drizzle with balsamic glaze if desired.
For a more traditional Italian experience, use ripe vine tomatoes and high-quality extra-virgin olive oil. Customize your bruschetta by adding sliced olives, vegan mozzarella, or roasted red peppers for extra flavor. Serve as a light breakfast or pair with a side salad for a hearty brunch.
