1/2 cup sweet corn kernels (fresh or frozen)
1/2 cup bell peppers, thinly sliced (use a mix of colors)
1/4 cup fresh cilantro leaves, chopped
1/4 cup red onion, thinly sliced
For Garnish:
1 Fresh cilantro leaves
1 Lemon wedges
1 Red pepper flakes (optional)
