Adjust Servings:
For the Lentil Patty:
1 cup dry red lentils, rinsed and drained
2 1/2 cups water
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup grated carrot
1/2 cup grated zucchini
1/4 cup finely chopped bell pepper (any color)
2 tsp Berbere spice blend (adjust to taste for spice level)
1 tsp ground cumin
1/2 tsp ground coriander
1 Salt and black pepper to taste
1 Cooking oil for frying
For the Vegan Yogurt Sauce:
1/2 cup dairy-free yogurt (coconut or almond-based)
1 clove garlic, minced
1 tsp lemon juice
1/2 tsp ground cumin
1 Salt and black pepper to taste
For Serving:
1 Burger buns (gluten-free if needed)
1 Lettuce leaves
1 Sliced tomato
1 Sliced red onion

For the Vegan Yogurt Sauce:
In a small bowl, whisk together the dairy-free yogurt, minced garlic, lemon juice, ground cumin, salt, and black pepper. Adjust the seasoning to your liking.
For Assembling the Burger:
Spread the vegan yogurt sauce on the bottom bun.
Place a lettuce leaf on top of the sauce.
Add a lentil patty to the lettuce.
Top with sliced tomato and sliced red onion.
Place the top bun on the stack.

Feel free to adjust the level of spiciness by adding more or less Berbere spice blend. Enjoy the Ethiopian-inspired flavors in this delicious lentil burger!
