For the Pancakes:

2 cups all-purpose flour

1 tsp salt

3/4 cup warm water

2 tbsp vegetable oil

For the Filling:

2 cups finely chopped scallions (green onions)

2 tbsp sesame oil

1/2 tsp salt

For Dipping Sauce:

2 tbsp soy sauce (or tamari for gluten-free)

1 tsp rice vinegar

1 tsp sesame oil

1/2 tsp sugar (optional)

1/2 tsp red pepper flakes (optional)
Directions
After the dough has rested, divide it into 4 equal portions. Roll each portion into a ball.
On a floured surface, take one dough ball and roll it out into a thin circle, about 8-10 inches in diameter.
Brush the surface of the rolled-out dough with a thin layer of vegetable oil, then evenly spread a quarter of the scallion filling over the oiled surface.
Starting from one edge, roll up the dough into a log, like a jellyroll.
Take the rolled dough and coil it into a spiral, tucking the end underneath. Flatten it gently with your hand to create a pancake.
Repeat the process with the remaining dough balls and scallion filling.
Heat a non-stick skillet over medium-high heat and add a small amount of vegetable oil. Once hot, place one pancake in the skillet and cook for about 2-3 minutes on each side until golden brown and crispy.
Remove the pancake from the skillet and place it on a paper towel to remove excess oil. Repeat with the remaining pancakes.
For Dipping Sauce:
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, sugar (if using), and red pepper flakes (if you like it spicy).
Serve the scallion pancakes hot, sliced into wedges, with the dipping sauce on the side.
Scallion pancakes are best enjoyed fresh and hot. You can customize the dipping sauce by adjusting the soy sauce, vinegar, and spice levels to your preference.
