Steps

1
Done

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2
Done

In a mixing bowl, combine almond flour, rice flour, powdered sugar, baking powder, and salt. Mix well.

3
Done

Add the melted coconut oil and almond extract to the dry ingredients. Stir until you have a smooth cookie dough.

4
Done

Roll the cookie dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.

5
Done

Flatten each ball slightly with the back of a fork, creating a crisscross pattern on top. If desired, press a sliced almond into the center of each cookie for decoration.

6
Done

Bake in the preheated oven for 12-15 minutes or until the edges of the cookies turn golden brown.

7
Done

Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. They will continue to firm up as they cool.

8
Done

Once completely cooled, store the cookies in an airtight container.

9
Done

Enjoy your homemade Chinese Almond Cookies as a sweet treat!
