Directions
These tacos are quick to prepare and packed with Caribbean-inspired flavors. You’ll love the combination of spicy jerk tofu and sweet mango salsa.
Feel free to adjust the level of spiciness by adding more or less jerk seasoning to the tofu marinade.
Steps
1
Done
|
In a bowl, whisk together the jerk seasoning, olive oil, tamari (or soy sauce), maple syrup, and lime juice to create the marinade. |
2
Done
|
Place the sliced tofu in a shallow dish and pour the marinade over it. Make sure each piece is well-coated. Allow it to marinate for at least 15-20 minutes, or longer for more flavor. |
3
Done
|
While the tofu is marinating, prepare the mango salsa. In a bowl, combine diced mango, chopped red onion, diced red bell pepper, chopped cilantro, lime juice, salt, and pepper. Mix well and set aside. |
4
Done
|
Heat a grill pan or skillet over medium-high heat. Grill the marinated tofu slices for about 2-3 minutes on each side, or until they develop grill marks and become slightly crispy. |
5
Done
|
Warm the gluten-free tortillas in the same skillet or microwave. |
6
Done
|
To assemble the tacos, place a few slices of grilled jerk tofu on each tortilla. Top with a generous spoonful of mango salsa and, if desired, vegan sour cream and sliced avocado. |
