For the Mango Salsa:

1 ripe mango, diced

1/2 cup diced red onion
-
1/2 cup diced red bell pepper

1/4 cup chopped fresh cilantro

1 jalapeño, seeded and finely diced (optional for heat)

1 Juice of 1 lime

1 Salt to taste

For Serving:

1 Burger buns (gluten-free if needed)

1 Lettuce leaves

1 Vegan mayonnaise

1 Sliced tomato
Directions
For the Mango Salsa:
In a bowl, combine the diced mango, diced red onion, diced red bell pepper, chopped fresh cilantro, jalapeño (if using), lime juice, and salt. Mix well.
For Assembling the Burger:
Spread vegan mayonnaise on the bottom bun.
Place a lettuce leaf on top of the mayo.
Add the fried plantain patty on the lettuce.
Top with a generous scoop of mango salsa.
Add a slice of tomato.
Place the top bun on the stack.
