1 lime , cut into wedges (about 1/2 cup)

1/2 cup frozen sugarcane juice concentrate (or 1/2 cup water + 1 tsp baking soda)

1/4 cup cacha ça or other sugarcane spirit (optional)

1 tbsp honey or maple syrup

1/2 cup ice cubes

1 tbsp freshly chopped mint leaves

In a glass, muddle the lime wedges and frozen sugarcane juice until well combined and slightly mashed. If using water and baking soda instead of frozen concentrate, stir together before adding to the glass. |

Add the cachaça (if using), honey or maple syrup, and pinch of salt to the glass. Stir gently to combine. |

Fill the glass with ice cubes, leaving about half an inch of space at the top. |
