Ingredients:

– 2 tablespoons cornstarch
– 1/2 cup water
Instructions:
1. In a medium bowl, combine the ground chicken, soy sauce, garlic, and red pepper flakes until well mixed.
2. Add the egg mixture into the chicken mixture, gently fold together using your hands.
3. In a separate bowl, whisk together the flour and cornstarch. Then add the water gradually, mixing until a thin batter forms.
4. Using a spoon or ice cream scoop, drop small balls of the batter onto a cookie sheet lined with parchment paper or wax paper. Bake at 375°F (190°C) for about 15 minutes, or until golden brown.
5. Meanwhile, heat up a grill or broiler to high.
6. To assemble the banh mis, spread some mustard on one side of each bun. Place a grilled cheese sandwich (using slices of bread that have been brushed with olive oil and seasoned with salt and pepper) between two halves of a banh mi baguette. Top the grilled cheese sandwich with a few leaves of lettuce and some cucumber slices.
7. Spoon some of the chicken sausage mixture over the top of the sandwich. Drizzle with fish sauce and enjoy!
