Ingredients List:
– 2 pieces of firm tofu (about 1/2 cup)
– 2 tablespoons of brown sugar
– 1 teaspoon of sesame oil
– 1/4 teaspoon of ground ginger
– 1/4 teaspoon of garlic powder
– 1/2 teaspoon of soy sauce
– 1/4 teaspoon of fish sauce
– 1/4 teaspoon of mirin
– 1/4 cup of water
– 2 tablespoons of olive oil
– 2 tablespoons of sriracha hot sauce
– 2 tablespoons of cornstarch
– 2 stalks of cucumber, cut into thin strips
– 1/4 cup of chopped green onions
– 1/4 cup of chopped scallions
– 1/2 avocado, cubed
– 2 nori sheets, cut into small squares
– Salt and pepper, to taste
– Sesame seeds

Instructions:

1. In a large bowl, combine the tofu, brown sugar, sesame oil, ground ginger, garlic powder, soy sauce, fish sauce, mirin, and water until well mixed. Let sit for at least 1 hour.
Note: This step helps tenderize the tofu and develop its flavor.

2. While the tofu marinates, heat a nonstick skillet over medium-high heat. Add the olive oil and saute the vegetables, such as cucumbers and green onions, until they begin to soften but not fully cook through. Remove from heat and set aside.

3. When the tofu has marinated for about 1 hour, rinse under cold water and pat dry. Cut into 1/2-inch cubes.

4. In a separate bowl, whisk together the cornstarch and water until dissolved. Set aside.

5. Heat a nonstick wok or pot over high heat. Once hot, add the remaining oil and pour the mixture onto the pan. Stir constantly until the mixture begins to thicken, approximately 1 minute.
Note: Be careful not to burn the mixture. Adjust the heat if necessary.

6. Pour the hot sauce mixture into a shallow serving dish and cool completely.

7. Assemble the bento box using the following layers:
– Place the tofu cubes on the bottom layer.
– Add a layer of vegetables next, followed by the avocado cubes.
– Top off with the nori sheets.

8. Drizzle the cooled teriyaki sauce over the entire bento box, ensuring it reaches all corners and sides.

9. Season generously with salt and pepper to taste, then top with sesame seeds.
