Instructions:
1. Heat the oil in a medium-large pot over medium heat.
2. Add the onions and sauté until translucent, about 5 minutes.
3. Next, add the bell peppers and tomatoes, lowering the heat to medium-low and allowing them to gently steam and soften, about 5 minutes.
4. Season the mixture generously with salt and pepper to taste, as well as any optional spices if desired.
5. Meanwhile, boil a pot of water for the lentils according to package directions.
6. Once the lentils are done, pour them into a bowl and set aside.
7. Return the cooked lentils back to the pot with the vegetables, mix together, and let sit for a minute before serving.
