Ingredients
– 1 tablespoon peanut oil
– 2 cloves garlic, minced
– 1/2 teaspoon red curry paste
– 1/2 teaspoon brown sugar
– 1/2 cup chopped fresh mushrooms (or frozen ones if you prefer)
– 2 tablespoons coconut milk (optional)
– 1/2 pound medium raw shrimps (or any other type of meat), deveined and peeled
– Salt and black pepper to taste
Instructions
1. In a large wok or skillet, heat up the oil over medium-high heat until it starts to smoke slightly. Add the garlic and saute for about 30 seconds until fragrant.
2. Next, add the red curry paste and brown sugar and stir well until they dissolve into each other. Cook for another minute or two while stirring occasionally.
3. Now, add the mushrooms and coconut milk (if using) and mix well. Reduce the heat to low and let simmer for about five minutes.
4. Meanwhile, prepare the shrimp by rinsing them under cold running water and seasoning them lightly with salt and pepper.
5. Once the sauce has been simmering for five minutes, add the shrimp and toss well to coat them evenly. Continue to cook, turning gently as necessary, for another four minutes.
6. To serve, ladle the stir-fry onto plates, drizzling the remaining sauce over top. Sprinkle with chopped chives or cilantro for extra flavor. Enjoy!
