Spicy Roasted Vegetable Bowl

Ingredients List:
– 1 medium sweet potato (about 1 cup)
– 1 red bell pepper, seeded and chopped
– 1 yellow bell pepper, seeded and chopped
– 1 large onion, roughly chopped
– 2 garlic cloves, minced
– 2 tablespoons olive oil
– ¼ teaspoon cumin seeds
– ½ teaspoon paprika
– ¼ teaspoon ground coriander
– Salt and black pepper to taste
Instructions:
1. Preheat your oven to 400°F. Line a baking sheet with parchment paper and set aside.
2. Cut the sweet potato into quarters lengthwise, and scoop out any insides. Place each quarter on the prepared baking sheet.
3. In a large bowl, combine all the remaining ingredients except salt and black pepper. Mix well to coat the vegetables evenly.
4. Season the sweet potatoes lightly with salt and black peper, then spread the mixture over the top of each sweet potato.
5. Bake for about 40 minutes, rotating once halfway through, until tender and browned. Remove from the oven and let cool slightly before serving.
6. Directions: Once the sweet potatoes have cooled off, use a fork to mash them gently while they’re still warm. Serve as a side dish alongside grilled chicken or fish, or simply enjoy as a satisfying meal all by itself!
