Instructions:

2. Cut the sweet potatoes into 1/2-inch cubes. Place them in a large bowl and cover with water. Set aside until ready to use.
3. Heat a large skillet over high heat. Add the oil and swirl to coat the bottom of the pan. Cook the onions, garlic, coriander, cumin, paprika, cinnamon, and salt for about 3 minutes, or until they become soft.
4. Add the sweet potatoes, green bell peppers, and red chili peppers to the pan. Toss everything together well and cook for another minute or two.
5. Pour the cooking wine or white vinegar over the mixture and toss again. Cook for 2 more minutes while constantly stirring.
6. Transfer the contents of the pan to a baking sheet lined with parchment paper. Bake in the preheated oven for about 1 hour, or until the sweet potatoes are tender. Remove from the oven and let cool slightly before serving.
