* 1/2 cup cucumber, peeled and chopped
* 1/2 red bell pepper, seeded and finely chopped

Instructions:
1. In a blender or food processor, combine all the ingredients except the ice cubes. Blend until smooth, about 1 minute.
2. Transfer the mixture to a bowl or container. Taste and adjust seasoning with more salt, pepper, vinegar, or lemon juice if desired.
3. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. You can also transfer the soup to a pitcher and let it sit overnight for a stronger flavor.
4. Serve cold, garnished with your favorite toppings such as avocado, olives, cherry tomatoes, cilantro, etc. Enjoy immediately!
Note: If you prefer a thicker consistency, simply puree the soup again after refrigerating it.
