Ingredients

Adjust Servings:
For the burgers:
1 can (15 oz) cooked black beans, drained and rinsed
1/2 cup unsweetened shredded coconut
1/4 cup rolled oats (not instant)
1 medium onion, finely chopped
1 clove garlic, minced
2 teaspoons smoked paprika
1 tablespoon ground cumin
1 tablespoon chili powder
1/4 cup breadcrumbs (gluten-free if necessary)
1 ripe avocado, mashed
1 tablespoon fresh lime juice
Salt and pepper, to taste
Optional: 1 teaspoon ground cayenne pepper (for extra heat)
For the toppings:
1 large sweet potato, baked until soft (about 20 minutes at 400°F) and sliced into rounds
1 ripe tomato, thinly sliced
1/4 cup chopped red onion
1 green cabbage leaf, thinly sliced
1/4 cup fresh cilantro leaves, roughly chopped
1/4 cup grated daikon radish (optional)
Lettuce leaves, as desired
Sesame seeds, for garnish

Instructions:

1. In a food processor, combine all the ingredients for the burgers until well combined but still slightly chunky. You may need to stop and scrape down the sides several times.
2. Divide the mixture into four equal portions and shape each portion into a round patty. Place the patties on a plate and set aside.

3. For the sauce:

In a small bowl, mix together the following ingredients:

* 2 tablespoons tahini paste
* 1 tablespoon apple cider vinegar
* 1/2 teaspoon Dijon mustard
* 1/2 teaspoon agave nectar
* 1/4 teaspoon salt
* Freshly ground black pepper, to taste

Whisk everything together until smooth. Taste and adjust seasoning as needed. Set aside.

4. Heat a large non-stick pan over medium-high heat. Add the prepared burgers and cook for about 4-5 minutes per side, or until browned and crispy.
5. Once cooked, place the burgers onto your favorite bun or lettuce wrap. Top with your choice of toppings (see below). Serve immediately with additional sauce on the side. Enjoy!

Note: To make these burgers ahead of time, you can prepare them through step 4 and store them in an airtight container in the refrigerator for up to 3 days. Simply warm them up before serving.

Total Time: Prep + Cook = 20 minutes (plus time for baking the sweet potatoes and letting the burgers cool before assembling).
