Ingredients:

For the chia puddings (makes 4 servings):

* 1 cup unsweetened almond milk
* ½ teaspoon ground cinnamon
* ¼ teaspoon ground ginger
* 1 tablespoon honey or maple syrup (optional)
* ⅓ cup chia seeds

For the roasted fruit (see notes for modifications):

* 1 small apple, cored and sliced
* 1 medium-sized banana, sliced
* 1/4 cup chopped walnuts or pecans (optional)

Toppings and mix-ins:

* 1/4 cup plain Greek yogurt (optional)
* 1 tablespoon raw tahini (optional)
* 1 tablespoon chopped fresh mint leaves (optional)
* 1 tablespoon slivered almonds (optional)
* Dates, chopped (optional)

Directions:

1. In a large bowl, whisk together the almond milk, cinnamon, ginger, and honey (if using). Let sit for about 5 minutes to allow the flavors to meld.
2. Add the chia seeds to the mixture and stir well to combine. Set aside while you prepare the fruit.
3. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
4. Place the apple and banana slices on the prepared baking sheet. Drizzle with a little bit of extra virgin olive oil and sprinkle with salt (about ⅛ teaspoon each). Toss until coated.
5. Roast in the preheated oven for about 15-20 minutes, tossing halfway through, until tender and slightly caramelized.
6. Remove from the oven and let cool completely before adding any additional toppings.

Assembly:

Divide the roasted fruit evenly between four glasses or jars. Ladle the chilled chia puddings over the top, allowing some of the fruit to peek out. Sprinkle with chopped nuts, if desired. Serve immediately.

Note: You can use other types of stone fruit, such as peaches or plums, instead of apples and bananas. Also, feel free to substitute other nuts like almonds or hazelnuts for the walnuts.
