For the chia seed mixture:

* 1/2 cup unsweetened chia seeds
* 1/4 cup maple syrup (or preferred sweetener)

For the fruit layer:

* 1 ripe mango, diced
* 1 pint fresh strawberries, hulled and sliced

Instructions:

1. To prepare the chia seed mixture, combine the chia seeds and maple syrup in a small bowl and stir well. Set aside for about 5 minutes until thickened.
2. In a large bowl, mix together the diced mango, strawberries, and pineapple. Divide these fruits evenly among four glasses or ramekins.
3. Pour the chia seed mixture over the fruit layers in each glass. You may need to adjust the amounts depending on how much liquid the fruit has absorbed.
4. Cover each glass with plastic wrap and refrigerate overnight. Alternatively, you can place them in the fridge for at least 2 hours before serving if desired.
