Ingredients

For the sticky rice:
1 cup brown short grain or arborio rice (ratio 1:1.5 water)
1 tbsp coconut oil
For the mango filling:
2 large mangos, sliced into small cubes
1/2 cup unsweetened shredded coconut
1/4 cup maple syrup
1/4 cup unsweetened almond milk
1 tbsp arrowroot powder
For the toppings:
1/4 cup chopped roasted cashews or peanuts (optional)
1/4 cup thinly sliced green onions (green parts only)
1/4 avocado, sliced
1 tbsp fresh cilantro leaves
1 lime, quartered

Instructions:

1. Cook the sticky rice according to package directions using a 1:1.5 ratio of water to rice and adding the coconut oil to the cooking liquid. Let cool completely.

2. In a blender, combine the mango filling ingredients and puree until smooth. Set aside.

3. To assemble the bowls, layer the following ingredients in each serving bowl: sticky rice, mango filling, black rice, cashew topping (if using), green onion garnish, avocado slice, and cilantro sprig.

4. Serve immediately and enjoy!

Note: You can also use other types of short-grained white or brown rice instead of black rice if desired.
