Instructions:
1. In a large bowl, whisk together the sesame oil, rice wine vinegar, sugar, garlic, ginger, and red pepper flakes until well incorporated. Add the honey and stir until combined.
2. Place the pork belly slices on a lightly oiled baking sheet. Brush both sides of each slice with the marinade mixture.
3. Season the pork belly slices with salt and black pepper to taste and place them in the fridge to marinate for at least 30 minutes up to 4 hours.
4. Preheat the oven to 450°F (230°C). Line two baking sheets with parchment paper.
5. When ready to cook, remove the pork belly from the fridge and transfer it to one of the prepared baking sheets.
6. Using tongs, carefully place the pork belly slices on the baking sheet. Make sure there is enough space between each slice.
7. Bake for about 20 minutes, flipping halfway through. After 20 minutes, check if they have browned sufficiently and increase the heat to 475°F (245°C) for another 5-10 minutes, until golden brown.
8. Remove the baking sheets from the oven and let the pork belly sit on cooling racks for 5-10 minutes before serving.
