Directions
Assemble the wrap fresh for best texture. You can prep the veggies and hummus ahead of time for a grab-and-go lunch. For a gluten-free version, use a GF wrap. For extra protein, add cooked white beans or grilled tempeh. Feel free to customize with seasonal Italian veggies like grilled zucchini or eggplant. The lemon-basil hummus can be made by blending chickpeas, lemon juice, olive oil (optional), garlic, tahini, and fresh basil.
