Ingredients:
For the patties:
* 1 cup cooked quinoa (can use leftover cooked quinoa)
* 1/2 cup cooked black beans (canned or homemade)
* 1 medium sweet potato, peeled and grated
* 1 large carrot, grated
* 1 small zucchini, grated
* 1 clove garlic, minced
* 1 tablespoon olive oil
* 1 teaspoon ground cumin
* 1/2 teaspoon chili powder
* 1/2 teaspoon paprika
* 1/4 teaspoon salt (or more to taste)
* 1/4 teaspoon black pepper
* 1 tablespoon chopped fresh parsley
* 2 tablespoons unsweetened applesauce
For the buns:
* 2 hamburger or hot dog buns
Instructions:
1. Preheat your grill or panini press to medium-high heat. If using a skillet, add a drizzle of olive oil to the bottom of the pan.
2. For the burgers, combine all the ingredients in a large bowl and mix well until everything is combined and there are no lumps. You may need to use your hands to mash the sweet potatoes and carrots into smaller pieces.
3. Using a cookie scoop or your hands, form the mixture into six evenly sized patties. Place the patties on a plate and set aside while you prepare the buns.
4. Grill the burgers for about 5 minutes per side, or until they’re nicely charred and heated through. You can also place the patties in a preheated skillet or panini press to cook them.
5. While the burgers are cooking, spread the insides of the buns with a little bit of your favorite vegan butter or dairy-free mayo. Add lettuce, tomato, onion, and any other toppings you like.
6. Once the burgers are done cooking, assemble each burger onto the prepared bun and serve immediately! Enjoy!
