Made with black beans, chickpeas, and aromatic spices like cumin, coriander, and garam masala, they’re perfect for satisfying your burger craving while still sticking to a plant-based diet. Serve them on whole wheat buns with fresh veggies and your favorite sauce for a complete meal!

Ingredients:
* 1 can (15 oz) cooked black beans, drained and rinsed
* 1 can (15 oz) cooked chickpeas (garbanzo beans), drained and rinsed
* 1 medium onion, grated
* 1 large carrot, grated
* 1 small red bell pepper, seeded and finely chopped
* 1/4 cup fresh cilantro leaves, roughly chopped
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1 tablespoon curry powder
* 1/4 cup breadcrumbs (panko or regular)
* 1/4 cup unsweetened apple sauce
* 1 eggplant, sliced into thick patties

Instructions:

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.

2. In a large mixing bowl, mash the black beans, chickpeas, onion, and carrot until well combined. Add the bell pepper, cilantro, salt, black pepper, curry powder, and breadcrumbs, and mix well. Stir in the applesauce and egg whites, just until combined. The mixture should hold together when pressed between fingers. If necessary, add more breadcrumbs.

3. Divide the mixture into four equal portions and shape each portion into a patty about 1/2-inch thick. Place the patties onto the prepared baking sheet.

4. Bake for 20-25 minutes, flipping halfway through. Remove from the oven and allow to cool slightly before serving.
