1 small can diced tomatoes (about 1/2 cup)
1/2 tsp cumin powder
1/2 tsp coriander powder
1/4 tsp cayenne pepper or red pepper flakes
1 tbsp fresh lemon juice (optional)
the Toppings :
Optional : Your choice of toppings such as sliced avocado, roasted sweet potato, grated carrot, chopped nuts (walnuts, pecans, almonds), raisins, dried cranberries, or goji berries

Description: This beautiful and delicious chia pudding parfait is packed with exotic flavors from Morocco, making it perfect for any occasion. It’s also gluten-free, grain-free, high-protein, raw (until you heat the sauce), seasonal, soy-free, spicy, whole foods plant-based, budget-friendly, fermented, and oil-free!

Ingredients:
For the Chia Seeds:
– 1/4 cup black chia seeds
– 1/4 cup white chia seeds
– 1/2 cup unsweetened coconut flakes (or more to taste)

For the Sauce:
– 1 small can diced tomatoes (about 1/2 cup)
– 1/2 tsp cumin powder
– 1/2 tsp coriander powder
– 1/4 tsp cayenne pepper or red pepper flakes
– 1 tbsp fresh lemon juice (optional)

For the Toppings:
– Optional: Your choice of toppings such as sliced avocado, roasted sweet potato, grated carrot, chopped nuts (walnuts, pecans, almonds), raisins, dried cranberries, or goji berries

Instructions:

Step 1: Combine the chia seeds and water in a bowl. Stir well until combined and let sit for about 5 minutes, or until thickened.

Step 2: While waiting for the chia seed mixture to set, prepare the sauce. In a blender or food processor, combine all the sauce ingredients and process until smooth. Set aside.

Step 3: Once the chia seed mixture has thickened, divide it evenly into four serving glasses or bowls.

Step 4: Top each serving with your desired toppings.

Step 5: Pour the prepared sauce over the top of each serving. Serve immediately. Enjoy!

Note: The sauce will continue to thicken as it cools, so if you prefer a thinner consistency, simply warm it up before pouring it over the chia puddings.
