Ingredients:
For the Watermelon Agua Fresca:
* 2 cups seedless watermelon cubes (about 1 small to medium-sized watermelon)
* 1 cup water
* 2 tablespoons raw agave nectar (optional, for sweetness)
* Juice from 2 limes
* Pinch of salt
* 1/4 cup ice cubes
For the Chia Seed Garnish:
* 1/4 cup raw chia seeds
Instructions:
1. In a blender, combine the watermelon cubes, water, optional agave nectar, lime juice, and pinch of salt until smooth.
2. Stir well to dissolve the sugar and salt. If desired, taste the mixture at this point and adjust seasoning accordingly.
3. Pour the watermelon puree into a pitcher or large glass container. Add the ice cubes and stir gently.
4. Cover and refrigerate for at least 1 hour, preferably overnight, to allow the flavors to meld.
5. Just before serving, pour the contents of the pitcher into individual glasses filled with ice.
6. To prepare the chia seed garnish, stir the chia seeds and 2 tablespoons of water together in a small bowl. Allow the mixture to sit for about 5 minutes, or until it becomes gelatinous.
7. Ladle the watermelon agua fresca into serving glasses. Top each glass with a few tablespoons of the gelled chia seeds and serve immediately.
Note: You can also double or triple the recipe if you plan to have more than 4 servings. Simply increase the amounts of all ingredients proportionally.
