Instructions:
Step 1: Prepare the coconut cream
Open the can of coconut milk and scoop out the solidified cream from the top. Transfer it to a bowl and set aside.
In a separate bowl, whisk together the water, cornstarch, and pinch of salt until there are no lumps. Add this mixture to the coconut cream and stir well. Set aside.
Step 2: Cook the rice
Rinse the brown rice under cold running water until the water runs clear. Drain any excess water.
Place the brown rice and water in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover the pan tightly with a lid, and cook for about 30 minutes or until all the liquid has been absorbed and the rice is tender. Remove from heat and fluff the rice with a fork.
Step 3: Make the sticky rice
While the rice is cooking, prepare the mango sticky rice. Combine the sliced mango, maple syrup, shredded coconut, and lime juice in a mixing bowl. Mix everything well and set aside.
Step 4: Assemble the vegan mango sticky rice
When the rice is ready, divide it into serving bowls. Spoon some of the prepared coconut cream on top of each portion of rice. Place the mango sticky rice mixture on top of the coconut cream. Garnish with sliced fruits, nuts, or both as desired. Serve immediately.
Note: You can also serve this vegan mango sticky rice chilled for a more authentic experience.
