• 4 large medjool dates (about 1 cup when pitted and chopped)
• ½ cup water
For the Tahini Miracle Cream:
• ¼ cup unsweetened natural peanut butter
• ⅓ cup raw tahini
• ⅛ teaspoon salt
• ½ teaspoon vanilla extract
• 2 tablespoons warm water
Instructions:
Date Puree:
1. Soak the dates in hot water for about 10 minutes until softened.
2. Add the soaked dates and water to a blender along with the cinnamon and honey. Blend on high speed until smooth and creamy, scraping down the sides as necessary. Set aside.
Tahini Miracle Cream:
3. Combine all the ingredients for the tahini mixture in a small bowl and whisk well.
4. Pour the date puree into a medium mixing bowl.
5. Whisk in the tahini mixture until fully incorporated.
Assembly:
6. Divide the chilled tahini mixture among four serving glasses or ramekins.
7. Top each serving with additional sliced dates, chopped nuts (optional), and a sprinkling of cinnamon.
Note: You can adjust the sweetness levels by adding more or less honey to taste.
