1 small onion, finely chopped
1 clove garlic, minced
1 tablespoon fresh coriander leaves, roughly chopped (optional)
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon turmeric
Salt and black pepper, to taste

For the buns:
1/2 cup whole wheat flour
1/2 cup rolled oats
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup unsweetened applesauce
Parsley or cilantro leaves, for garnish (optional)

Instructions:

For the falafel mixture:

1. In a food processor, combine all the ingredients for the falafel mixture and process until well combined and slightly chunky. You can also mash everything together using a potato masher if you prefer.
2. Transfer the mixture to a bowl and stir in enough water to form a thick batter. Cover and refrigerate for at least 30 minutes.

For the buns:

1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.
2. In a large mixing bowl, whisk together the flours, oats, baking powder, and salt. Add the applesauce and mix until a sticky dough forms.
3. Turn the dough out onto a lightly floured surface and knead for about 5 minutes, adding more flour as necessary, until the dough comes together in a ball.
4. Roll the dough into balls about the size of golf balls. Place them on the prepared baking sheet, leaving plenty of space between each one. Flatten each ball slightly with a fork.
5. Bake for 12-15 minutes, or until golden brown. Remove from the oven and let cool completely.

For the burgers:

1. Heat oil in a large skillet over medium heat. Using wet hands, shape the chilled falafel mixture into patties about 1/2 inch thick. Gently place the patties in the hot skillet and cook for 3-4 minutes per side, or until golden brown. Remove from the heat and set aside.
2. To assemble the burgers, spread hummus generously on the bottom halves of the buns. Top with a few slices of tomato, lettuce, onions, and avocado. Place a falafel patty on top, and drizzle with tahini sauce. Close the burger with the top bun and serve immediately.
