Ingredients:
For the Avocado Mousse Base:
• 1 medium ripe avocado (about 1/2 cup flesh)
• 1/2 cup unsweetened coconut yogurt
• 1 tbsp. raw cacao powder
• 1/2 tsp. vanilla extract
• 1/2 tsp. maple syrup
• A pinch of sea salt
For the Dragon Fruit Topping:
• 1 large ripe dragon fruit (about 1 cup), cubed
• 1 tbsp. lime juice
Optional Garnish:
• Coconut flakes
• Cacao nibs
• Torn pieces of date palm rolls
Instructions:
1. Prepare the avocado mousse base: Add all ingredients into a blender and process until smooth and fluffy. Taste and adjust sweetness if desired. Transfer the mixture to a small bowl and set aside.
2. Prepare the dragon fruit topping: Combine the cubed dragon fruit and lime juice in a bowl. Mix well and let sit for about 5 minutes. The dragon fruit will start to soften and release its juices. Set aside.
3. Assemble the mousse: Scoop out about 2 tablespoons of the avocado mousse and place it in the bottom of four serving glasses. Top each scoop with a layer of dragon fruit topping. Continue alternating between the layers until you run out of ingredients. You should have two more layers of each after filling up the glasses. Smooth the surface with a spoon or offset spatula.
4. Chill and serve: Cover the glasses with plastic wrap and refrigerate for at least 2 hours or overnight. Serve chilled and enjoy!
Note: If your mousse becomes too thick, simply add a few teaspoons of water to loosen it up.
