For the Dragon Fruit Topping:

Instructions:
1. Begin by making the coconut cream base. Open the can of coconut milk and scoop out the solidified cream from the top, setting aside any liquid that has separated below.
2. Place the solids in a high-speed blender along with the remaining ingredients for the base. Blend until completely smooth and creamy, adding more water if necessary to achieve your desired consistency.
3. Next, prepare the dragon fruit topping. In a large mixing bowl, combine all the ingredients for the topping and toss gently to coat everything evenly.
4. Divide the prepared coconut cream base among four serving bowls. Top each portion with about ⅓ of the dragon fruit mixture.
5. Garnish each serving with additional sliced dragon fruit, fresh mint sprigs, and optional raw cacao nibs for extra crunch.
