Instructions:
Step 1: Prepare the cake batter:
Combine the dates, figs, and apple sauce in a food processor until smooth. Add the ground flaxseed mixture (1 tsp ground flaxseed + 3 tbsp water), baking soda, and salt. Process until well incorporated.
Add the dry ingredients (gluten-free flour, chia seeds, and warm water) to the wet ingredients and mix until just combined. The batter will be thick and sticky. Pour into a greased and parchment-lined 8-inch square baking pan.
Step 2: Bake the cake:
Preheat your oven to 350°F (175°C). Bake the cake for 30 minutes, or until a toothpick inserted comes out clean. Allow the cake to cool completely before proceeding.
Step 3: Make the glaze:
Whisk together the almond milk, maple syrup, arrowroot powder, and sea salt in a small bowl until smooth. Dip a rubber spatula into the glaze and drizzle it over the cooled cake. Let the glaze set for about 10 minutes before serving.
Note: If you prefer a thicker glaze, simply double the amount of ingredients. You can also use agave nectar or honey instead of maple syrup if desired.
Serve the cake plain or garnish with additional fruit, nuts, or edible flowers. Enjoy!
