1/4 cup unsweetened shredded coconut flakes (optional)
the Avocado Slices:
2 ripe avocados
Lime juice , to taste
Salt and pepper, to taste
the Tahini Sauce:
1/4 cup water
2 tablespoons lemon juice
2 cloves garlic , minced
2 tablespoons tahini paste
1 teaspoon apple cider vinegar
Black sesame seeds, to garnish (optional)

Ingredients:

For the Fermented Bread:

* 1 cup lukewarm water
* 1 tablespoon sugar (optional)
* 1 teaspoon active dry yeast
* 2 cups all-purpose flour (gluten-free if needed), plus extra for dusting

For the Avocado Slices:

* Lime juice, to taste

For the Tahini Sauce:

Instructions:

1. In a small bowl, whisk together the warm water, sugar (if using), and yeast until dissolved. Let sit for about 5 minutes until frothy.
2. Add the flour and salt to the yeast mixture and stir well to combine. Knead dough on a lightly floured surface for about 5 minutes.
3. Place the dough in a greased bowl, cover it with plastic wrap, and let rise in a warm place for about 1 hour or until doubled in size.
4. Meanwhile, prepare the avocado slices by cutting them into thin rounds. Squeeze lime juice over the avocado and sprinkle with salt and pepper. Set aside.
5. Preheat a large skillet over medium heat. Once hot, reduce the heat to low.
6. For the croutons, cut the risen dough into bite-size pieces and fry in batches until golden brown and crispy. Remove with a slotted spoon and transfer to paper towels to drain any excess oil.
7. To assemble the toasts, spread the tahini sauce onto each slice of bread, then top with avocado slices. Sprinkle with chopped parsley, black sesame seeds (if using), and serve immediately.
