* 1/4 cup unsweetened shredded coconut
* 1/4 cup panko breadcrumbs
* 2 tbsp whole wheat flour
* 1 tsp smoked paprika
* 1 tsp garlic powder
* 1/2 tsp onion powder
* 1/4 tsp cayenne pepper (optional)
* 1 egg white
* 1/4 cup water
* Salt and black pepper, to taste

Instructions:

1. Preheat your air fryer to 375°F. Line a small bowl with paper towels and set aside.
2. In a large mixing bowl, combine the shredded coconut, panko breadcrumbs, whole wheat flour, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Stir until well combined.
3. In another bowl, whisk together the egg white and water until frothy.
4. Dip each shrimp into the egg wash, allowing excess to drip off. Roll each shrimp in the coconut and breadcrumb mixture, ensuring it’s fully coated. Place the coated shrimp onto the lined baking sheet, making sure not to overcrowd the basket.
