Ingredients:
For the Miso Sauce:

For the Tofu and Veggies:

Instructions:

Step 1: Make the Miso Sauce
Combine all ingredients for the miso sauce in a small bowl and whisk until smooth. Set aside.

Step 2: Cook the Tofu and Veggies
Heat a large nonstick skillet over medium heat. Add the tofu, carrots, bell peppers, and onions. Cook, stirring occasionally, for about 8-10 minutes or until the vegetables are tender and lightly browned. Remove from heat.

Step 3: Assemble the Lettuce Cups
Place a few handfuls of mixed greens onto each serving plate. Top with cooked vegetables and tofu mixture. Drizzle generously with the prepared miso sauce. Garnish with additional green onions and sesame seeds if desired.

Note: You can prepare everything ahead of time and store in separate containers in the refrigerator for up to 3 days. Simply assemble the cups right before serving.
