Description: This vegan version of the classic Thai dessert features creamy mangoes, glutinous rice, and coconut milk, making it a delicious and nutritious treat. The best part? It only takes minutes to prepare!

Ingredients:

For the sticky rice:
* 1 cup long grain brown rice (soaked overnight, drained, and rinsed)
* 1 cup water
* 1/2 teaspoon salt

For the coconut cream sauce:
* 1 can full fat coconut milk (14 oz)
* 1 tablespoon maple syrup
* 1 tablespoon arrowroot powder
* 1/4 teaspoon vanilla extract
* Pinch of sea salt

For the mango topping:
* 2 ripe mangos, sliced into small cubes

Instructions:

Step 1: Prepare the sticky rice according to package instructions using the soaking method (rinse rice, cover with 1 inch water, bring to boil, simmer covered until tender). Once cooked, transfer to a large bowl and set aside.

Step 2: Meanwhile, combine all the ingredients for the coconut cream sauce in a blender or food processor. Blend until smooth and creamy.

Step 3: Add the prepared sweet rice to the blended coconut mixture from Step 2. Mix well until the rice is completely coated with the sauce.

Step 4: Pour the coconut-rice mixture into individual serving bowls. Top each serving with sliced mangoes and enjoy immediately.
