Description: This creamy vegan mango sticky rice recipe is a refreshing twist on the traditional Thai dessert, perfect for satisfying your sweet tooth while still being healthy and easy to make. The use of ripe mangos, coconut milk, and glutinous rice gives this dessert its signature creaminess without any dairy or added sugars. Instructions:
1. Prepare the glutinous rice according to package instructions, using a ratio of 1 part rice to 1 1/2 parts water. Bring the mixture to a boil, cover with a tight-fitting lid, and reduce heat to low. Cook for about 40 minutes, or until all the water has been absorbed and the rice is tender. Let the cooked glutinous rice cool completely before proceeding.
2. While the rice is cooling, prepare the coconut milk sauce. Combine all the ingredients for the coconut milk sauce in a blender and puree until smooth. Set aside.
3. Once the glutinous rice is cool, transfer it to a mixing bowl and stir in the mango cubes and chopped mint (if using). Mix well to combine.
4. Place the sticky rice mixture in individual serving bowls and top each one with a dollop of the coconut milk sauce. Serve immediately and enjoy!
Note: You may also like to serve this dish with Sweet Chili Dipping Sauce (see recipe below).
