For the Chia Seeds Mixture:
• 1 cup raw chia seeds
For the Coconut Milk Mixture:
• 1 can (400mL) full-fat coconut milk
For the Flavor Mix:
• ½ ripe mango, peeled and chopped into small cubes (about ¾ cup)
• ¼ teaspoon vanilla extract
Optional Toppings:
• Sliced almonds or walnuts
• Coconut flakes
• Rolled oats
Instructions:
1. In a large bowl, combine the chia seeds mixture with 1/2 cup of water. Stir well and set aside for about 10 minutes until thickened.
2. Meanwhile, prepare the coconut milk mixture by combining all the ingredients in a blender. Blend on high speed until smooth and creamy.
3. Pour the coconut milk mixture into the chia seed mixture and stir gently until combined. Cover and refrigerate for at least 2 hours or overnight.
4. Serve cold in individual serving bowls or glasses and top with desired optional toppings. Enjoy!
Note: For a thicker consistency, use less liquid when soaking the chia seeds. If you prefer a looser consistency, simply add more liquid.
