Preparation Time: 10 minutes + chilling time
Total Time: 30-40 minutes
Instructions:
Step 1: Puree the avocado and sweetener
Place the avocado, cocoa powder, and maple syrup in a food processor or high-speed blender. Process until smooth and creamy, scraping down the sides as needed.
Step 2: Make the chocolate mousse
Add the cold liquid to the mixture and process until thick and fluffy. Taste and adjust sweetness if desired. Transfer to a bowl and cover with plastic wrap directly touching the surface to prevent a skin from forming. Refrigerate for at least 2 hours or overnight.
Step 3: Make the strawberry sauce
Combine the strawberries, lemon juice, and sugar (if using) in a small saucepan over low heat. Cook, stirring occasionally, until the berries break down and release their juices. Remove from heat and let cool completely.
Step 4: Assemble the dessert
Spoon the chilled chocolate mousse into individual serving glasses or bowls. Top each serving with a few tablespoons of cooled strawberry sauce. Garnish with additional sliced strawberries and crushed almonds or shaved chocolate.
Note: The mousse will keep in an airtight container in the refrigerator for up to 3 days. The strawberry sauce can be stored separately in an airtight container in the fridge for up to 2 weeks.
