2/3 cup + 2 tbsp (170g) raw cashews, soaked overnight and drained**

1/4 cup (55g) unsweetened shredded coconut

1 tbsp maple syrup (or preferred sweetener)

1/2 tsp cayenne pepper (optional)

For the Berry Compote:

1 cup (150g) mixed fresh or frozen berries (such as blueberries, raspberries, blackberries, strawberries, etc.)

1 tbsp chia seeds

1 tbsp maple syrup (or preferred sweetener)

Note: To press the tofu, place it between two layers of paper towels and place a plate or something heavy on top. Let sit for about 30 minutes to remove excess water.

Instructions:
1. For the Creamy Cashew Tofu Mousse:
Combine all the ingredients in a blender and process until smooth and creamy.
Transfer the mixture to a bowl and refrigerate for at least 2 hours or until set.
Serve immediately or store in an airtight container in the fridge for up to 3 days.
2. For the Berry Compote:
In a small bowl, combine the mixed berries, chia seeds, and maple syrup.
Allow the chia seeds to soften and absorb the liquid, creating a thick compote.
Stir occasionally while keeping in the fridge.
3. To serve, scoop out the mousse into four serving glasses or bowls.
Top each serving with about 1/4 cup of the berry compote.
