Ingredients

Adjust Servings:
For the Creamy Cashew Tofu Mousse:
1 can (400g) full-fat coconut milk (or any non-dairy milk alternative)
1 block (398g) extra firm tofu, drained and pressed*
2/3 cup + 2 tbsp (170g) raw cashews, soaked overnight and drained**
1/4 cup (55g) unsweetened shredded coconut
1 tbsp maple syrup (or preferred sweetener)
1 tsp vanilla extract
1/2 tsp cayenne pepper (optional)
For the Berry Compote:
1 cup (150g) mixed fresh or frozen berries (such as blueberries, raspberries, blackberries, strawberries, etc.)
1 tbsp chia seeds
1 tbsp maple syrup (or preferred sweetener)
Note: To press the tofu, place it between two layers of paper towels and place a plate or something heavy on top. Let sit for about 30 minutes to remove excess water.

Instructions:
