Instructions:
Step 1: Combine the pudding base ingredients in a blender.
Place all the ingredients for the pudding base into a high-speed blender and process until smooth and creamy, scraping down the sides as needed. Transfer the mixture to a bowl and set aside.
Step 2: Assemble the puddings.
Divide the prepared pudding among four serving glasses or ramekins. Use a spoon or piping bag to create a decorative swirl if desired. Place the glasses in the freezer while you prepare the toppings.
Step 3: Make the topping.
Combine the ingredients for the topping in a separate bowl. Mix well and divide evenly between the four glasses. Top each one with the topping mixture.
Step 4: Serve chilled.
Remove the puddings from the freezer and let them sit at room temperature for about 10 minutes before serving. Garnish with fresh fruit and toasted coconut flakes, if desired. Enjoy immediately!
